The American Breakfast
Breakfast: there is no meal that I anticipate more highly, and no other meal leaves me feeling more guilty. The American breakfast consistently consists of 3 groups: starch, meat, and eggs. The stars of the show are the meat and the eggs. What’s with the cholesterol attack?! I’m getting sick of this….
Even if I go to a fancy restaurant and order the spinach quiche (hoping to get some greens), the spinach often appears to have been added more for aesthetic appeal than for nutritional value.
I’m not sure if it’s specific to the Americans/Europeans, but breakfast is utterly colorless: it has no vegetables. And, without color, it is also low on nutrients. I take that back: nutrients abound (e.g. lots of B vitamins and choline from the eggs), but there is a disproportionate amount of harm – namely, cholesterol, saturated animal fat, lack of fiber - relative to benefit .
I took matters into my own hands yesterday. Here’s what will be on my plate every morning this week:
- Star of the show: mustard greens and black eyed peas!! (recipe forthcoming)
- Pan-fried potatoes
- One pork-apple sausage
- 1-2 pieces of toast with fruit jam
- Bowl of cashews, flax seed fiber, blueberries, and granola with whole milk
So 1/3rd of my breakfast plate consists of mustard greens+black eyed peas and another third consists of potatoes. Now I’m happy.
Vishal, you need to come visit nyc and bring this breakfast flare. My breakfast is usually solid black: coffee.
